I can't wait any longer, here are those fudge recipes:


Maple Pecan Marshmellow Creme Fudge:

1- 5-10oz jar of marshmellow creme
1- 12oz pkg butterscotch chips
1 1/2c. sugar
2/3c evaporated milk
1/4c butter
1/4 tsp salt
1 tsp maple flavoring
1c chopped pecans

Butter the sides of a med-large saucepan. Combine marshmellow creme, sugar, milk, butter and salt. Let sit approx 1 hour. Over med heat, bring to a boil stirring constantly. Boil 5 minutes. Remove from heat and stir in butterscotch chips. Stir until melted. Stir in maple flavor and pecans. Pour into a well buttered pan (I use a 8x8) and chill until firm.

Now I substituted vanilla for the maple, because hubby doesn't like maple and I didn't add the nuts, because I like my fudge without.


Cranberry Fudge:

1 1/4c fresh or frozen(thawed) cranberries
1/2c light corn syrup
2c chocolate chips
1/2c powdered sugar
1/4c evaporated milk
1tsp vanilla

Line bottom of 8x8 pan with plastic wrap. In a med saucepan bring cranberries and corn syrup to a boil. Boil for 5-7 minutes stirring occasionally. Remove from heat and stir in chocolate chips and stir until melted. Add remaining ingredients and stir vigorously until thick and glossy. Pour into pan and chill until firm.


Marshmellow Creme Fudge:

1- 5-10oz jar of marshmellow creme
2/3c evaporated milk
1- 12oz bag of chocolat chips
1 1/2c sugar
1/4c butter
1/4 tsp salt
1 tsp vanilla
1c walnuts (optinal)

In med saucepan combine marshmellow creme, sugar, milk, salt and butter. Bring to a boil and boil for 5 minutes stirring constantly. Remove from heat and stir in chocolate chips. Stir until melted and smooth. Stir in vanilla and nuts. Pour into well buttered pan (8x8) and chill until firm.

Enjoy.

I'm going to make fudge! I just can't take this any longer!! Have to go to the store to get all the ingredients! Problem is...I'll eat it all myself most likely! Oh well, we only live once!

I had a little chipotle meatloaf leftover so made meatloaf burritos, topped with salsa verde and sour cream they were pretty good and EEEEEEEEEEEEEEEEEZ

All this talk about fudge convinced me to pull out my cranberry fudge recipe!! It is super simple and is quick and easy!! I make other variations of it for 'Plain Fudge' 'Goober and Raisinette Fudge' 'Chocolate Peanut Butter Fudge'

3 cups white chocolate chips
14 oz can sweetened condensed milk (save the can) *** I use the FF sweetened condensed milk and it comes out exactly the same....just less fat!!!
1 teaspoon vanilla extract
1 cup macadamia nuts
1/2 cup dried sweetened cranberries

If anyone is interested in the actual recipe, let me know and I'll be happy to share it!! Like I said, it is quick and easy, which is crucial for me with this teeny, tiny kitchen!!
