Nothing exciting here tonight-last night I roasted a chicken rubbed well with olive oil, salt/pepper, mashed potatoes, cream gravy, peas.

Still suffering with this dang cold-so heating the leftover navy bean soup.

It is soooooo cold here today, yesterday we were at 40+, today -45 with wind chill. How I wish this winter would go away!!!

so sorry about your cold, dd and I both have bad ones.... I made our fave comfort food for lunch, grilled cheese and cream of tomato soup.

LOL-that's what we had!! Yes hubby decided he didn't want to have a cold alone so he shared.

Hope you both feel better real soon.

thanks, elston! I do the escarole in a saute pan, with olive oil.... I dont add the garlic until the end, so as not to burn the garlic. I do broccoli, broccoli raab, spinach, any other leafy green I can lay hands on this way.

But its sooooo gooooood!

One of fave things for a quick dinner is a bottle of roasted garlic alfredo sauce, I use barilla, 4 oz of blue cheese crumbles, thrown in a pot together and melted, some sliced, roasted chicken breast to put over pasta and sauce. Some sauteed broccoli, and packaged garlic bread, and you're done!
hmmmm-sounds good - not sure about the blue cheese though - I'd have to sneak it past hubby lol

Nic, try using just 2 oz of cheese at first...... it will give just a tiny, interesting "whats that lovely taste" kind of thing, I also put just a pinch of nutmeg in the alfredo. Its traditional, but most bottled sauces dont put it in.

Nic and Kshe-love nutmeg in alfredo and any cream sauce. And we too could eat pasta daily.

LOL, I love nutmeg! My micrograter is one of my fave kitchen gadgets, fresh is sooooooo much better, I sneak it into all kinds of stuff!
