I am gonna make some chicken breast tenderloins and top a mixed greens salad with them. I have lots of veggies to put in the salad as well as some pine nuts.
I have to make some kind of carb side or my SO will think he is starving half to death in an hour. I tried to tell him he just needs to get used to not having the carb but he doesn't believe me....lol
Tonight I am making broiled salmon steaks with potato wedges (homemade) and steamed broccoli. BUT....what I really want is about five pounds of mac and cheese.
Whole roasted chicken (which is one of our favorites since we got the convection ovens - the skin really crisps up!)
Broccoli or gai lan (Chinese broccoli)
Maybe some rice
We ended up doing chinese takeout last night (too tired to cook) so tonight I'll make the Beef Stroganoff over egg noodles for my daughter, and Mr. Goldy will be bbq'ing chicken or fish on the new bbq he just recieved for his birthday. He went out fishing yesterday in Santa Cruz and caught some rock cod so I'm thinking perhaps the cod with a southwestern medley of black beans, corn and bell peppers on top drizzled with some lemon and olive oil.
I had to have dinner early since I am teaching tonight ... I had a steak salad ... yum! I hope it holds me 'til 10 p.m.!!
