spicy yellow squash/poblano/onion casserole with Italian sweet sausage, a little parmigiana reggiano grated on top, a slice of crusty olive bread to go with.
Boneless chicken tenders "Buffalo Wings" with my special wing sauce, celery sticks and homemade ranch, crusty bread, neopolitan ice cream for dessert. For after dinner - a glass of chilled Gallo Chardonney, my house wine!
Today, I am trying a new recipe - a Crockpot version of chili: organic canned kidneys beans, a few cubes of chicken breast, cumin seeds and powder, chopped garlic, chopped onions, fresh basil and cilantro (from the garden), red pepper flakes, and tomatoes. I'll top the chili with fresh onions and a little cheddar cheese.
For veggies - cucumber, onion and artichokes with a sprig of fresh parsley, a splash of balsamic vinegar and freshly ground black pepper.
