Rumbling through the kitchen last night. Remembered an old favorite. Jar of prepared spaghetti sauce, two small cans of white tune in water. Just heat sauce and tuna (maybe add spices to personal taste) and serve over any pasta. Made a couple of slices of garlic toast. Desert was espresso and slice of Panettone cake. Good, fast, and an inexpensive meal.

Last night's dinner (all alone):

Chicken vegetable soup with wild rice
Tater tots
Maple glazed pineapple chunks
Apple crumb pie
Coffee

I am in the process of cleaning out my pantry/freezer/refrigerator prior to the hospitals. I am afraid that some of my meals will start looking like a Chopped competition, especially since all the meat in the house is 24 oz. of country ham, two cans of salmon and six strips of bacon.

I have chicken soaking in a honey brine, then I will make double dipped buttermilk fried chicken tenders. Making a buttermilk parm potato gratin and roasted brussel sprouts. Can you tell I have buttermilk I need to use up?
