Everyday food because of this dump of an apt I live in because our maintenance men cannot fix anything right and Im done with this place !! So we can only use the cook top portion of our stove cause our oven is a hole in the wall ...Hopefully next place I move will have an oven that works and a dishwasher ..and a patio . So just everyday food .
You need a roaster oven! You can get one at Walmart for $30 or less, and it's big enough to cook a turkey, ham or brisket. I use mine to make tamales also. The instructions for the oven tell how to bake cakes in it, but I haven't tried that yet.
A traditional Southern American Christmas Dinner is being planned here: turkey breast, cranberry sauce or jelly, wild rice, sweet potato casserole, corn pudding, green bean casserole, crescent rolls, and ambrosia. For dessert, choices of coconut cake, peppermint ice cream, fruitcake, pecan or mince pie - and if I get really ambitious, wine jelly with boiled custard.
Scalloped oysters, dressing, and watermelon pickles are off this year's menu (dressing may return). The casseroles, cake, pies and ambrosia will be prepared in advance. I'll probably get a baked turkey breast, as I expect only two or three guests this year.
I also need to make a few appetizers to occupy my guests during the last fifteen minutes before dinner is served - probably something cheesy, crunchy, and easy.
It's been a couple of years since I've had this classic Christmas dinner, as I was the guest of others whose traditions were very different, so it will be nice to have it back on my table once again.
Forgot about dessert - home-made mulled wine dark chocolate truffles. Might experiment with some other flavours this year too, maybe Earl Grey truffles to go with afternoon tea.
We're heading back to our hometown for Christmas, and staying with my in-laws. I'm hoping that my father-in-law will make one of his outstanding omelets in the morning, then we'll probably just rest and snack until my mother-in-law hosts her "Christmas happy hour" in the afternoon, which is exactly what it sounds like. Plenty of drinks and appetizers.

Yep the only problem with that is I have no counter space at all ...I mean I truly hate this apt I live in looking for another place in 4 months but thanks for that just would not work for us . And Im not sure it would not blow the circuit in this dump LOL...
