We don't eat anything special for Christmas eve since we have a big dinner the next day for Christmas. For Christmas we have ham, yams, rolls, cranberry sauce, mashed potatoes and gravy, and pies.

For Christmas Eve this is what I am planning:

Baked brie en croute with homemade spicy raspberry jam
Giardiniera
Smoked gouda
Charcuterie
Sharp stilton
Grapes
Homemade country bread and assorted crackers
Fresh salmon croquettes with lemon-dill cream cheese
Spiced olives
Roasted garlic
Shortbread dipped in dark chocolate

Christmas day:

Classic shrimp cocktail
Horseradish and mustard crusted prime rib with horseradish sour cream on the side
Russet, sweet potato, and gruyere gratin
Roasted fennel, turnips, and garlic with croutons made from the leftover bread
Cranberry relish
French silk pie with whipped cream
And lots of wine and champagne cocktails!

For Christmas day we are having Chicken parmesan, lasagna, sausage, meatballs, garlic bread and salad. It's an easy meal for my SIL to make. Cheesecake and assorted cookies for dessert.

I know one thing i'll be eating for sure and that is my mommas red velvet cake, yummy...haven't had it in two years so i'm really looking forward to it this year.

christmas day

prime rib- i'll buy the whole 7 rib rib-eye....bone it out and tie back on

lobsters... succulent maine lobsters in drawn butter and sea scallop & shrimp kabobs

lamb leg - butterflied, rolled and tied,,,,cooked and sliced thin on a platter

meatballs and pulled pork for appetizers


christmas eve,,,, maybe some chinese food....

steak tartare-now here's something you dont see too often anymore..

although i have prepared it for quite a few folks- if you cut deeper in the primal/meat, there is much less chance of bacteria exposure, than if you used trimmings/muscle
from the surface


i use to eat raw burger quite often years ago..... i was lucky-never got sick...
my great grandfather, lived to be over 100 ate raw burger all his life,,,he also smoked for over 60 years
he had a high protein diet,, tho he didnt like sweets, and avoided them

We celebrated Christmas today (family reasons) and the meal was delicious It was my first time cooking the Christmas ham and it came out perfect and the swede casserole was the best I've ever tasted! The potato casserole didn't come out quite right though but nevermind. Good food and a full belly and plenty of wine
