I just put a corned beef roast in the crock pot to cook overnight. In the morning I'll put it in the fridge to cook and dry out a bit. Then will make ruebens tomorrow night for dinner. Using kimchi in place of sauerkraut. Will make a hybrid of homemade horseradish thousands island type sauce. Oven fries alongside.
I definitely cheated this evening, some may know I broke 2 toes yesterday morning and unfortunately I had to go to the grocery this afternoon. So I put on my little canvas keds, no socks, 19 degrees outside and drove the 20 miles to the grocery. On the way home I stopped at Pizza Hut and got their $10.00 "Any Pizza" deal. I ordered a large, thin & crispy, an order of breadsticks and a glass of Mug Root Beer. I had 2 breadsticks, 3 pieces of pizza, the root beer and brought the rest home. So for less than $20.00 I had supper tonight, will have lunch & supper tomorrow and maybe lunch the next day. Not bad for 4 meals.

Happy 1. of March,Saturday..I was thinking to make tonight one of my favorite childhood dishes from Bavaria..Breadcrumb dumplings with a mushroom sauce ,a green salad and a Löwenbräu. For dessert vanilla ice cream with half a pear and melted hot chocolate ( in German we call it Bierne Helene (Pear Helene) )
Breadcrumb Dumplings
1 cup fresh brown or white or mixed buns/bread in ½ inch cubes
1/2 tsp. parsley
1/4 tsp. thyme
1 beaten egg
6 Tbsp. milk
2 Tbsp. fine diced onion
1/2 tsp. fine diced garlic
1 tsp. butter
1/2 tsp. salt
freshly black pepper
Saute onion and garlic in butter until lightly browned,pour milk over onion and garlic and simmer for 1 minute. Next add herbs and bun/bread cubes. Add beaten egg,salt/pepper to taste. Stir and mix well. Make from the bread crumb dough good sized balls ( I use wet hands,they shape better than) Meanwhile boil salt water in a pot,lower to simmer when slowly sliding in the bread crumb balls.Cook covered for about 3 minutes.
Mushroom Sauce
2 cups sliced mushrooms of your choice
3/4 cup diced onion
2 Tbsp. olive oil
1/4 cup chicken/vegetable broth
1/4 cup whipping cream
Pinch of ground nutmeg
salt/black pepper to taste
1 Tbsp. finely cut chives
Saute mushrooms/onions together over medium heat for 3 minutes, add chicken/vegetable broth. Lower heat,and add whipping creme..do not let it boil ... simmer for 2 more minutes. Flavor with nutmeg, salt, black pepper. When ready to eat get bowls out and serve mushroom sauce in it ,add breadcrumb balls and sprinkle with chives. Serve with a green salad or even as a side dish to some meat,like Schnitzel,steak or a filet.
