Several folks asked me to let you know how this turned out. Well it was delicious. It looked very pretty except for one thing...the sauce was white on top of white rice and hid the pretty colors of the brown with specks of green in the chicken. The last few minutes of the chicken cooking I drizzled a bit of melted butter to give it a nice color. I guess I could have just served the chicken with the sauce and a different starch or veggie but my family loves chicken and rice together. But it tasted incredible and I will definitely make it again. Try it.
