Spicy jambalaya tonight with some corn bread. Great for a cold, rainy night.
CCM123, couldn't rep you again so soon but you are right - I love jambalaya on a chilly night. I don't think I've ever made cornbread with it though - that's a good idea. I usually have French bread or rolls.
Did not feel like cooking tonight, so had a Stouffer's Fit Kitchen Bowl: steak fajitas in smoked red chile sauce with red & green peppers and brown rice (certainly not restaurant quality, but pretty good for a microwave meal). Drank Modelo beer.
Street tacos (tinga chicken), cilantro-lime rice, and a southwestern chopped salad.
