A Pernil...roasted seasoned Puerto Rican style pork shoulder.

fried Salted Cod fritters ( bacalaítos)

a big salad.
and maybe some ceviche if I am lucky enough to hook a Fluke or two this morning.

Instead of fileting and broiling the Bluefish I caught yesterday, we baked in whole with tomatoes and onions, and lime slices last night...

when we finished it the only think left was the head and very end of the tail..and the bones were picked so clean they looked like they were sun bleached in the desert.

Out & about with friends this afternoon and will surely overeat, so tonight planning on just salmon & asparagus to even things out.

I know now that we should be having chicken salad wraps with leftover chicken breast from last night dinner. Possibly there will be a dab of something green to be found without having to venture out.

Let us all, as we enjoy our Holiday barbecues, picnics, parties, etc. please remember the true reason for Memorial Day;

That being to honor our fallen Servicemen and Women, also our POW and MIA service personnel.

Their Service and ultimate sacrifice has made it possible for us to be able to enjoy this Holiday weekend.
