What's for Dinner? 2018 Edition (mushrooms, freezer, tuna, pizza)

I went "simple" tonight ... Campbell's chicken noodle soup. Of course it isn't hearty enough on its own so I added diced veggies (carrots, zucchini, onions, mushrooms, roma tomatoes) and quinoa with a bit of chili flakes for some heat ...
It was surprisingly good and surprisingly filling. At some point I will make my own chicken soup, but until then, I must rely on canned soups ...
I can never rep you enough, my friend, that looks AMAZING!!
Last night we had corn dogs, I so miss my friend LondonCowboy to envy that meal (although I did enjoy it )
Tonight I baked some breakfast sausage links to serve with Mexican omelets, warmed corn tortillas, and watermelon chunks.
The omelet filling is grated cheddar and a pre-sauteed chopped veggie mixture consisting of: 1 small garden tomato (yay), clove garlic, 2 seeded jalapenos, 2 inch hunk of sweet onion, a few radish greens, salt and pepper. Fresh garlic chives and basil sprinkled over before serving.
do you know what happened to London Cowboy? I miss his posts too. Anyway I had the left over macaroni and beef from last night, DH had grilled Chicken thighs and leftover mashed potatoes from Saturday nights meal.
Used up another pre-made pizza crust loaded with turkey pepperoni and loads of veggies on the grill.
