Grilled pizza, one fig, prosciutto and blue cheese and one blackened crawfish tails with motz, fontina and parmesan.

This weather is horrid! It's too hot and humid to cook inside or out. Oh winter how I miss you!
Anywho for dinner I am thinking homemade cheeseburger subs. I like mine with lettuce, onions, pickles, hots and mayo.
I will try to convince the husband to grill the burgers but with today's high of 96°f and swamp like humidity I won't blame him if he doesn't want to. I'll probably just use the grill pan in the AC.

We are having chicken breasts. I cooked up a bunch that were frozen and had,somehow gotten just enough defrosted to all stick together making one big ice block. It was either cook all or toss, I choose to cook them all and am not sorry. It is nice to take them out of
the freezer, doctors them up a bit and cook them for just a few minutes. We are also having raw veggies, carrots, turnips, and slightly steamed beets. I think I will add couscous as well. No,not raw, I will cook them first.

Smothered chicken, potato salad, and fresh tomato. Iced tea.

Chicken is browned as a start to a fried chicken but finished with oil removed and covered in the same glass covered red copper skillet covered in cream of mushroom soup at a simmer until fall off the bones tender.
