Fried some organic ground beef with onion, taco seasoning, sweet peppers, spinach & salsa.Had on a tortilla with cheese. Mighty good.

I made homemade tabbouleh, except with quinoa instead of wheat bulgur. It came out exactly as expected though I feel like the taste of the diced scallions was way stronger than it ever seems to be in store bought tabbouleh. I wonder why? I used way less of it than I notice in store bought versions.

But the good thing is that my husband absolutely loves it and instantly promoted it to the "staple meals" list! Not an easy feat given that he's a picky militant vegan.

Absolutely love tabbouleh but I still want it with wheat bulgur..

Tonight I am doing a boneless rib roast with veggies. I think I will also make fruit salad and a green veggie, but not sure which one, probably green beans.

"Real meatloaf." It leaves me puzzled but I'll bet you know what they mean, Threestep.

Last night Bachelor Son was here and I promised,(what to call it?)) taco pie? Mexican lasagna? lazy enchiladas? But the weather was so glorious I went for the first motorcycle ride of the season and combined it with a quick morel and wildflower search. Saw some Dutchman's britches. Cute little things.

Thought I was all alone out there in the woods but then realized I was surrounded by silent morel hunters. Everyone stops looking at the ground when you see them. Including me. LOL

Also strolled by the river looking for those forbidden frog eggs or tadpoles to seed in my pond. I'm a hardened criminal when it comes to frogs. No luck but I could hear their spring song all around me.

So when I got home I didn't feel like cooking and instead we had ham and Swiss sandwiches with Dijon mustard and cole slaw and potato salad that I had in the refrigerator. Tonight we'll have the faux-Mexican dish.
