In 50 years people will be able to choose the looks of their children. I suspect the current racial definitions will become muted. Tan skin, soft curly hair, green eyes and soft features.
You don't have to dismiss Hispanic culture to "play up" being an American. It's not necessary, and makes it look like you have an anti-Latino agenda.

Technically speaking; I am not of WASP lineage (my father is from Hungary), note that I do self identify as an Anglo AKA a non 'Hispanic' White.

No one "needs" to, but it's their choice. If you don't identify with anything but American, good for you. But others have ties to other cultures as well. Why do they need to not h ave that connection?
How does your wife feel about her heritage? You say she's a legal immigrant. There's a difference between people who have had roots here for several generations, and people who can relate to a parent or a grandparent of a different culture.
