If they are really good fries, like in France, they don't need anything; otherwise, good qualiy ketchup (no high fructose corn syrup).

The local taqueria tops frenchfries with carne asada, guacamole, and crema.

Add some pico de gallo and it makes a great meal.

I have never topped fries with anything but salt. However, I am not opposed to dipping them in something.
