Never heard of anyone using Mayo either, but to each their own. lol
There is a restaurant in Portland Maine called Duck Fat...and indeed there fries are hand cut and cooked in Duck Fat and served in one of those cone holders. They provide truffle catsup as the condiment.
I think that mayo is what is served with fries in Belgium...... now I need to go Google that.
I did google it and yes creamy mayo is one of the common toppings for fries. (Incidentally French Fries originated in Belgium.)
more trivia...... In Belgium fries are fried twice with a 20 min rest in between and the last cooking is at a higher temperature.
-first choice is lemon mayonaisse & fine seasalt ( I always have Devos & Lemmens lemon mayonaisse from Belgium)
-2nd choice would be sometimes peanut butter & hot chilli sauce
I have been to places in Belgium with at lest 30 or more sauce choices. When there I mostly try something new. I usually go for the spicy ones.
I normally eat them plain just salt but sometimes Mayo or Mayo and Ketchup.
In Holland Patatje Oorlog "War Fries" rules - a combination of French fries, mayo, raw onions and Indonesian sate sauce.
If I'm feeling decadent, I'll sprinkle parmesan and drizzle melted garlic butter on top of Yukon fries. It's heavenly!
