Lots of salt and tons of paprika. Which means since nobody has mentioned it yet you people don't know about good fries. Then dip in your favorite dipping sauce.

Sweet Baby Ray's Barbecue Sauce, or else homemade garlic mayonnaise. Unless they are duck fries, which get nothing extra but coarse ground sea salt.

Often, good vegetarian restaurants in big cities, especially California cities, use different types of potatoes with unusual tastes and textures. Look at the outside menu if you have a yen for spuds.

Lotsa' salt for sure (maybe with just a smidge of paprika), and dipped in honey-not honey "sauce", but "plain" honey.

I have had french fries fried in duck fat at a restaurant in Las Vegas. OMG they are sooooo good!

Usually salt, ketchup and malt vinegar.

What else is great...ketchup AND ranch dressing.

I'm from Buffalo and there's a restaurant that serves a chicken-wing style fries - do with them just like wings...out of the fryer, into the mix of butter and Franks red hot, serve with Blue Cheese dressing. OMG.
