I'm making a healthier version of baked ziti. I use turkey Italian sausage. Brown with EVOO and cut up with green pepper. Boil water and use whole wheat penne. In a baking dish combine penne, 28 oz diced tomato, 2 tsp tomato paste, 10 oz frozen peas, the sausage and peppers. Top with shredded mozzarella and bake at 350 until warm.

My son's last night home, so I am making one of his favorites - meatless walnut loaf with a brown sherry enhanced gravy.

Baked potatoes with choice of sour cream and chives or butter - or both. Roasted Brussels sprouts.

Brownies for desert.

For my dinner, I used leftover homemade macaroni and made a three-cheese mac and cheese with spinach. It is amazing how much better mac and cheese is with homemade noodles.

DH is having black beans and rice with kielbasa.

Unsweetened iced tea to drink.

No cooking tonight - DH picked up birthday pizza for me. Later we'll have some ice cream (I'm not a big cake eater).

Hi peeps! I'm working tonight so a protein shake at work and then some rotisserie chicken from grocery store after. I'll get home around 11 and will probably be hungry
