Dinner tonight is crab cakes with a garlic aioli cocktail sauce and leftover Spanish rice and collard greens. Unsweetened iced tea to drink and fruit salad for dessert.
A nonfat blueberry Greek yogurt, 3 toasted slices of stone ground whole wheat bread with healthy-style margarine & strawberry preserves and a mug of black tea with a teaspoon of sugar.
Well, dinner changed on the fly, because I didn't have enough rice! So I made a red lentil chili with rice. DH liked it so much, he thinks I should post the recipe on FB! LOL
I bought some Italian sausage at a local supermarket today, Rouse's. They originated in New Orleans and have expanded around Louisiana. I'm not crazy about all of their stuff, but they do have some things that are kinda hard to find, such as fresh made Italian sausage. Usually their sausage is ok (not terribly authentic, but Italian is hard to find here).
So I bought the sausage, a red bell pepper, broccoli rabe (another thing that is hard to find here--Rouse's is the only place I've found it consistently), some mushrooms.
Cooked it all up together with lots of garlic, made some pasta to go with it. The sausage was awful. Had enormous fennel seeds that just felt like bone bits. The seasoning was a little off, kinda sweet and very salty.
A disappointing dinner. Good thing I have some wine.
