Special post graduation dinner tonight featuring all of my daughters favorites - plus a few new things -

Shrimp and Grits

Baked home made macaroni and cheese

Chick pea tomato and red onion salad

grilled okra and tomatoes, char grilled baby carrots, and grilled sweet potatoes with lime and cilantro.

Grilled black bean burgers with avocado.

Banana cream pie. Watermelon and a variety of ice creams.

Sweet tea or Jalapeno-Cucumber Margaritas.

So proud of my daughter. In the fall she is off to college - so I'll be cooking for two.

But tonight, we have a full house!

Evidently, Bubba Burgers now makes veggie burgers (squee!!), so I'm cooking up some of those, corn, and sliced red peppers.

I just finished eating one, and it was pretty darn good. If someone is looking for a meaty texture (like Boca burgers) they probably won't like it, because it has a softer texture. But for those who want true veggie goodness and a mild flavor, it's a great choice. It's funny because fresh out the package it looks like a big cookie with M&Ms, with all of the veggie and bean chunks.
