I went to the Catfish Farm this morning & they had just finished filleting the fish. Bought 4 lbs. Baked Catfish on top of red bell peppers, Vidallia onions, & a chiffonade of zucchini & carrots. Couscous and Caesar Salad. I love eating at home.

This sauce is insanely delicious. With only 3 ingredients I was sure I needed to add salt, basil, garlic and so on. It was just perfect as is.

Dinner has been the same for the last three nights.

Pâté d'arachide sur du pain d'avoine avec les dates.

(Peanut butter on oatmeal bread with dates.) Fwiw, I forgot to bring a bloody bottle of water. It happens.

The week has been busy, hence the meal where I don't need to wonder if it's going to kill me when I eat it because I'm on the road and I didn't keep it refrigerated. Mild mannered engineer during the day, photographer extraordinaire at night. Well, photographer anyway. Tonight it was a dress rehearsal for a ballet company's performance tomorrow and Sunday. These dancers are the ones who are truly extraordinary. I still have two more days of self-inflicted craziness. No matter, it's fun.

Sometimes a plain peanut butter sandwich is the perfect dinner.

Saturday menu as per DS....pot roast in the crock pot, topped with onions and carrots and brown gravy. Red cabbage and mashed potatoes. Warm deep dish Apple pie with vanilla ice cream. I don't eat like this anymore, but once in a very great while it's ok.

Since I had a big lunch late in the day, I just made myself a peanut butter sandwich and washed it down with a glass of 2% milk.

I had to eat on the run so I had the crunchy pickle chicken club from Wendy's.
