I grilled some chicken breast and whipped up a honey mustard sauce... wrapped it up in a spinach tortilla with chopped romaine, a couple slices of bacon and sliced avocado.
Delicious.
Had a summer shandy to drink and had frozen yogurt for dessert. First time trying Oikos fro-yo... was actually quite good. (We had chocolate and cafe latte flavors)
We had the smothered pork chops, seasoned with fresh thyme from the garden. I was thinking about making biscuits, but turned them into fluffy dumplings. It was a big hit with the other half.
Fresh, cold watermelon for dessert, after a digestion delay. Those chops & dumplings were filling!
Tonight a light meal...spinach soup with potato and cumin lassi to drink. For dessert a nectarine or dark red plum.
1 medium potato
2 cups water
2 tbsp butter
2 large fine diced garlic cloves
4 cups diced onions
salt to taste
1 tsp cumin
heaped 1/2 tsp turmeric
cinnamon to taste
2 lbs fresh cut spinach ( I use baby spinach)
1 1/2 cup plain yogurt
black pepper and cayenne pepper to taste
leave diced,cooked potatoes in the boiled water aside. Heat butter and saute garlic and onion with spices and salt til tender. Add potatoes with the water and the spinach. Cover and simmer about 15 minutes. You can either pureed the soup or leave as is. Now stir in room temperature plain yogurt,add pepper and cayenne. It tastes great hot or cold. Hot I serve it with a warm naan,cold I serve with little dinner buns and butter.
I'm set for a while. In the refrigerator are potato salad, cole slaw, lettuce and tomatoes, fried chicken, cold roast beef and summer sausage. I baked a blueberry pie and bought the fixings for strawberry shortcake.
It'll be take-your-pick coasting the rest of the week.
The cole slaw is an old Depression era recipe from my MIL, keeps forever in the refrigerator and is cheap, quick and easy as could be:
Shredded cabbage and veggies. Bring to boil half a cup of sugar, half a cup white vinegar, pinch of salt and a cup of water. Let cool and pour over vegies. Let stand overnight before serving.
You could add celery seed or mustard seed if you'd like.
We are having a roasted pork loin, carrot and crason salad and veggies. I might add a carb, but am not sure.
