Crazy day today and I hadn't planned anything, so I looked in the freezer / cupboard.
Defrosted some shrimp, put them on some heavy duty foil, sprinkled them with a quickly mixed up 'creole' seasoning (garlic powder, onion powder, paprika, black pepper, white pepper, cayenne pepper & salt) and drizzled on a little olive oil. Added a can of black beans, some fresh corn and chopped cilantro. Sealed it up in a packet and grilled for about 12 minutes or so.
My plan was to have shrimp tacos, and my daughter told me that we had corn tortillas, but when I checked them, they were frozen and expired in the meat drawer
So, we plopped the mixture on leftover romaine lettuce, sprinkled on some shredded cheddar jack, spritzed on lime juice and spooned on some sour cream and served with sliced avocado and had it as a kind of salad.
Very tasty, and the best part is I didn't have to go to the store for anything!
Will have ice cream cones for dessert a little bit later.
Roasted chicken leg quarters, nicely seasoned, a baked potato, and green beans, with a little bit of chicken gravy made from the pan drippings. If we dessert, it will probably be some of that sweet watermelon we still have in the fridge.
LOL!! as I was typing my anewer I got a feeling it déjà vu....I looked back at the last time I answered this question, and realized I had the exact same meal on June 28.
Hot dogs and home made quacamole, made with a lime from my own tree.
Not fancy but it wasn't bad- chicken a la king on crescent rolls.
