I made apple wood BBQ chicken in my Oklahoma Joe offset (I know...boring). I also tossed some ears of corn and some oysters in there. All I can say is - I enjoyed an oyster-fest (oysters, butter, garlic, onions, salt, pepper) while waiting for that chicken to cook. We had elote loco (corn, butter, cotija cheese, Old Bay seasoning) with the chicken. Oh, and we had Alabama "white sauce" on that chicken.

Spoiled brat is grilling tonight, but I haven't told him yet. I don't want to see him cry! this is our once a week beef night, steaks, grilled veggies and salad.

Pork chops (breaded or grilled), corn on the cob, oven fries, lots of garden tomatoes and cucumbers.

Oh, something of the standard unimaginative fare.

Angel hair pasta. Sauce of sardines and anchovies with a Chardonnay base,garlic, Italian and Cajun seasoning. Served over croutons with a Pinot Noir.

As I said, nothing special.

There's a pot roast in the oven, with onions, mushrooms and carrots. Mashed potatoes on the side.

Tonight we're having slower cooker pork chops with mushroom gravy, scalloped potatoes, roasted asparagus and chocolate mousse for dessert.

I combined some veggie salads from Costco:

Taboule mixed with their Mediterranean chickpea and black bean salad, then added 2 extra diced tomatoes, a can of chickpeas, and a can of black beans with fresh lemon juice.

Fresh asparagus from Aldi.

A flatbread grilled cheese fried in the cast iron skillet with Costco naan bread and shredded mozzarella cheese, the outside herbed up with Costco no-salt organic seasoning and fried in butter.
