Correction. Hubby's beef soup/chili that I thought we were having for dinner turned out to be posole. This was a first for us to have at home and it was awesome.

Last night I cooked/served a banquet for one of the sports teams at the school where I work. Staff gets to eat also, so I had: stuffed shells and meatballs, roast beef au jus, baked breaded chicken, oven browned parsley potatoes, and cherry pie. There were also green beans and salad, but there was no more room on my plate for those.

It's a rainy, dreary day here. I am going to make a big pot of meat sauce and serve it with spaghetti. Maybe I will make garlic bread unless I get too lazy.

I haven't had stuffed shells in ages; I think I will put that on my menu for next week.

It was supposed to be a raining day here, but the rain forgot to stop, so I think I am going to take advantage of the decent weather and ask spoiled brat to grill the steelhead trout with some veggies. I have lots of fresh veggies in the fridge and have to use them before they find their way to the trash can. Also will have tomatoes and cottage cheese and maybe a baked potato, but am not sure about that.
