As for me, I just finished off a helping of pernil (Puerto Rican roast pork) and homemade Spanish rice and beans. Leftovers from the other day. I cooked a 6 pound pork shoulder, so I'll have leftovers for the next day or so
last night was panko-crusted turkey cutlets, okra, and corn -- off the cob for me, unfortunately, due to some dental work going on -- with cantaloupe & blueberries for dessert.
Tonight will be herb roasted chicken thighs, roma beans, more corn, and more berries.
We had ribeyes and asparagus, both on the grill. I have been cooking asparagus in the oven, but I liked it better on the grill. It was tender-crisp. Seems to get soggier in the oven.
I'm planning on homemade pizza tonight. I have some stale brioche, so I'll make some sort of bread pudding out of it. Probably a bit of bourbon will be involved.
