It was hot today, though we're having yet another blessed summer rain storm.

I'm making tuna salad with celery and dill pickles.

Dinner is tuna sandwiches, dill potato salad, sliced garden tomatoes, and carrot sticks.

Potato chips on offer, and chocolate bundt cake for dessert.

Pernil (succulent Puerto Rican roast pork) with a side of rice and peas and possibly potato salad if I'm up to it.

With the exception of a few minor changes (for instance, I use apple cider vinegar instead of white vinegar), I essentially follow Daisy Martinez's recipe:

Israeli salad (basically diced cucumber and tomato) and open faced sandwich with mayo, paprika, sauerkraut, and pickled herring.

My daughter gave me a package of stevia for baking to try out. Today I want to experiment with a cobbler for DH's dessert that is sugar free and heart healthy...I need to take advantage of the glut of blueberries and black berries at our house. He had a heart attack a couple of months ago and his diet has been severely restricted. Boy, does he miss homemade pies!!!!! He's been a good sport about eating the berries plain or with yogurt and in oatmeal, but he wants a "real" dessert of them so badly. I always spoiled him with blackberry crumb pies this time of year. Blackberries grow wild in the woods around our place, and my daughter's place. Years ago, we planted blueberry bushes on our property, and they are really thriving, but we get more blackberries and black raspberries growing wild out in the woods. Every summer I pick and freeze huge batches of berries so I was able to make cobblers and pies all the way up to Thanksgiving.

I'll see how blueberry/blackberry sugar free cobbler turns out for his dessert, and if he likes it.

Tonight we are going to our youngest great granddaughters second BD party. I guess they are just grilling burgers which is fine with us.
