Spring has sprung
Hamburgers off the grill (pork/beef/cheese), fries, a huge green salad, hopefully sippin'bourbon on the porch for desert.

Hockey night in Canada .....

Tonight creamy celery soup with cheese sandwiches or tandoori chicken breast sandwiches,dill pickles,red radish and onion salad with olive oil,vinegar,salt/black pepper.To drink beer and homemade wholewheat cheddar cheese crackers. Later wholewheat chocolate chip/oat cookies with a cup of black coffee or Darjeeling tea.

Creamy celery soup ingredients

olive oil
Vidalia onion
celery
potatoes
vegetable broth
thyme/salt/black pepper to taste
bit of fresh chive for decoration

I made these last night and you're right, the Frontera is delicious. Thanks very much for that recommendation, Wintergirl.

One lb of hamburger isn't quite enough for this carnivore, so next time I will make it in a 9 X 9 pan to get more meat per serving. Plus a smaller pan will need fewer tortillas and get more sauce flavor too.

Left over baked spaghetti.

Ground beef, onions, diced can tomatoes, jarred Prego sauce, blk olives, red bell pepper, and cheddar cheese. Of course, spaghetti, and a few red pepper flakes.

I started a beef stew in the slow cooker before I left this morning. I just got home and it smells divine in here. That, plus I will make garlic bread from last night's leftover bread, will be tonight's dinner.

It’s getting late, but I’ve no clue. I guess I’ll make smoked sausage and baked beans with some artisan bread, and a tomato herb and feta salad.

Another desperation dinner; went to the Lambertville Flea Mkt. today..before we left, mi esposa found thin sliced chuletas ( pork chops)in the freezer and took them out.
we were going to fry them with peppers and onions.

But I remembered a dish my parents made with leftover Ham or chops from the Fanny Farmer cook book.

checking the fridge and cabinets...we had all the ingredients; 1/2 head of cabbage, heavy cream, caraway seeds, paprika and Swiss cheese.( called for grated Swiss, we had Deli sliced)

Simple enough, brown chops in a little oil. preheat oven to 350F

chop cabbage, boil for 5 minutes, drain in same pot, put in 1/2 cup cream, paprika, caraway ( we also added some chopped scallion white and green) return cabbage, cook for 5 minutes..

In oven safe casserole dish, layer 1/2 cabbage mixture..lay your chops over the top..including the pan juices..layer remaining cabbage on top.

place 1/2 cup Swiss on top..baked for 40 minutes.

I will add pictures after we eat. so hungry ... :-)
