we are having our Thurs night Happy hour so dinner will simply be what we are about to have for lunch and probably a couple of appetizers during happy hour. This saves me cooking when we get home.

A mini roasted vegetable stacked enchilada dish with zucchini, mushrooms, peppers, back beans, corn, corn tortillas, and my favorite 505 green chile sauce.

Angus beef cheeseburger on thin multigrain roll with sliced tomato (ran outta onion) and bit of Kraft Avo mayo and crushed peppercorn. Alexia crinkled sweet potato fries and a small portion of Mac'nCheese. To drink: Stewart's Orange Cream and water on the side.

I went shopping a couple weeks ago and my local Big Y had frozen alligator meat. Well that was a first in Mass! Last year while in Florida I found out my kids LOVE alligator. So I bought a package.

Tonight for dinner the husband is making fried alligator bites for the kids. I will make some corn on the cob for them too. Later on I will make me and the husband tuna fish sandwiches. I like alligator but it's a small package and I know they will eat it all. Maybe I will sneak a bite or two!

Boil soup with the leftover potatoes, garlic, onion, corn and andouille sausage, plus a few crawfish tails from the crawfish boil last Saturday.

THAT sounds good. I have kalmatas, feta, sun dried tomatoes, artichoke hearts.... what else is on it? I'll add arugula.... because... arugula.

I bought the pizza dough kit from Costco, just because I get lazy, but I think I want this for tomorrow night.
