I cooked about 80 meals & froze them for my mum. She doesn't like to cook & at her age, appreciates the microwave.
So, even though I generally shun frozen food, I'll probably have one of those (pan fried chicken, mashed potatoes w/gravy & vegs) or I'll have a small piece of steak with 3-4 egg yolks. I'm not currently picky... was on the road for a couple of weeks, so any "real" food is sheer joy.

Good for you, looking out for mom. As mom's when we get older we love what are kids do for us; we may not like too much attention cause we like to think we can still do everything, but down deep we say: thanks kids.
I saw the menu but almost everything has garlic mashed potatoes and mixed vegetables as a side. seems like there is not much variety. some dishes also have the same sauces. although I am sure the food is tasty.
This guy could probably cook anywhere but people want him in Southern MN. It must be a real personal sacrifice on his part. I'm guessing he's fulfilling a lifetime dream of getting out of other peoples' kitchens and being his own boss.
Chances are that, because I've never seen anyone there but him, he has streamlined the kitchen work. Yes, the couple of times we've been there in the late afternoon he was maitre d', waiter and chef. Maybe on weekends he has extra help?
Seems like a common dilemma for a chef. They're creative folks and eventually chafe under corporate rule but making money elsewhere is really tough.
Chef Daughter ran a restaurant for one of our governor's campaign managers (Oh, the secrets I could tell) and was asked to cook at the Governor's mansion. "Go, go" Mom said. Daughter said, "No way am I going to have that man in my kitchen telling me how to cook." LOL
She's finally found her way after thirty years of slaving to private chef and catering but has many friends who suffer under the drudgery of following orders. It's a real burnout issue.
At least that's my guess on the whys and wherefores of the menu. If it makes a difference the veggies are fresh. Personally, I'd go for the desserts alone.
Went to lunch, patio dining, ordered a Thai chicken salad, but boxed it up after a few bites, due to an annoying fly, so I will have that for dinner.
