I went to this excellent and authentic Mexican restaurant in Annapolis. It's literally located inside of a gas station convenience store; the ultimate hole in the wall

I got a jumbo combination platter of chicken, two kinds of beef, pork, shrimp, rice, beans, guac, pico, and a host of assorted sides (peppers, onions, etc.). It's enough to last me for a few meals at least.

Yes, this was for one person

Made a modified Sheperd's pie... used roast beef instead of burger. I like it better than hamburger. To be followed with butter lettuce & lemon/oil dressing in a bit.

Your recipe sounds nice... but, I can't eat wheat, cheese or tomatoes... allergies make my diet infuriating to even discuss. Oh, TY, ES. I've ended up in the ER, choking, several times recently... peanuts hidden in something or other. It's an ever-growing list & allergies normally exacerbate asthma, which is untreated... I'm also allergic to every drug on the planet... even fabrics, all kinds of products from haircare to face products to cleaners.
< Big sigh >

Sometimes I forget, sometimes I test to see if I still have a problem... I've just gotten used to it.

We had baked potatoes for dinner, as we were both tired. Mine was a loaded. Dogboa had mexican with salsa, jalapenos, cheese and bacon.

In my recent travels, I came across a wonderful taqueria inside a gas station convenience store... I'd never seen anything like that before. Coincidence that it was actually called A Hole in the Wall... paper sign & all, only open 2-3 hrs/day, for lunch.

It was in NV, NM or AZ, I forget, filled with locals... no one spoke a word of English, including employees. I just watched what most ordered & pointed to the same. It was wonderful food, the lines were long, the prices not as cheap as you'd expect. BTW, it was also organic & tortillas were homemade... love unexpected finds.
