Good luck with your new job!

A bowl of homemade tomato sauce, packed with beef/pork, for me. Lettuce with lemon-oil dressing later, if still hungry.

Tonight I am making butter chicken. I am throwing zucchini into the sauce. I will also have some jasmine rice to serve it on.

The kids came by to dig some ferns and I served an early supper that was supposed to be an outdoor picnic. But the temp was only in the forties.

Mediterranean rice and shrimp salad, pita with hummus, avocado, feta and chives and ginger citrus dressed grapes, honeydew melon and tangelos.

Thanks Rick! We find it hard to find broccoli rabe too in central Illinois. We get it but oh so rarely. We sub kale, spinach, chard, and beet tops for the rabe or rapini. Coincedentally, we actually have been very interested in relocating to SW Virginia!

Tonight's meal was vegan Goulash. Sorry no pic, was a bit hectic around here today. The goulash consisted of onion, garlic, mushrooms, a 1/2 lb of Beyond burger, a couple of home-smoked Beyond hot Italian links, tomatoes, carrot, S&P, basil, serrano pepper, oregano and whole wheat macaroni. Served with garlic bread and a glass of merlot to drink.
Cheers!
