Since it's Sunday, it's my turn to play in the kitchen, the first time in several weeks, actually; last week we were working at the convention and the week before we were both too tired from gardening to think about cooking, so I haven't had my kitchen fix in quite a while.
I woke up this morning thinking about pork tenderloin for some reason, and upon investigating the freezer, discovered that we have a tenderloin from our favorite Farmers' Market meat vendor. It must have been calling to me from the kitchen, don't you think? I'm thinking that I'll slice it down into medallions, pound them out flat, dip them in flour, then egg, then seasoned panko and do a quick pan-sear on each side, and let them finish in the oven. While they're finishing, I'll add some sliced onions and crimini mushrooms to the pan and get them to the point of being tender, then add a bit of flour and brown it to make a roux, then dump in some mushroom broth to make up a nice gravy to go over the medallions. Mashed potatoes on the side, I'm thinking, and some of the asparagus we picked up at the Farmers' Market yesterday morning.
But before that, we've got a trip to Menard's on the agenda; spouse doesn't like the weed-eater we've got, and is hunting for alternatives. Will stop by later and report on how supper comes out.

The Agenda - May 31 - June 6
This week in the Case abode, I've got lasagna for this afternoon (just out of the oven as I'm writing this), along with garlic cheese bread and crisp salad. I have three types of dressing from which to choose: Italian, French, and ranch. Also ahead are meatballs and pasta, black-eyed peas, and a small beef tenderloin roast that I plan to make with either scalloped or fried potatoes. And I need to rummage up something to help satisfy my craving for banana pudding!

I was all set to make my pulled pork and pineapple pizza tonight. Openned the crust and they were moldy. Expiration date in September....Regrouped and made another couple of sandwiches with it loaded with jalapeno peppers. Still plenty of meat left to try it agin tomorrow night.
Oh, Nomad - what a disappointment! I hate it when that happens, but it sounds like you found a good alternative.
The panko-fried pork tenderloin medallions were wonderful, the gravy came out just exactly as I was planning, the mashed potatoes with a bit of onion cooked and mashed along with the taters were just right, and the asparagus was tender and perfect. Spouse pronounced it a success, and agrees that the panko adds a real yummy crunch to the result.
I really like the outcome of the three-step dredge - seasoned flour, then egg/milk, then panko puts a perfect crunchy seasoned breading on the meat. The last time the spouse tried using panko, he put the seasoning in the crumbs, and it all wound up in the bottom of the bowl instead of on the food.
Still have to cook up a panful of chicken strips to go over my lunch salads this week, so I'll go get one more pan dirty before the poor guy starts washing up. Have a great evening, all, and a wonderful week - happy June!
Lacey, yes that is what h brought home. I am going to have him make me some home made peach ice cream this week to have with this pie, now maybe I can gain some weight too.
Homemade ice cream and pie??? Yum!!
My little one keeps asking to make "blue" pie with blueberries. I may give in and make one with him this week.
