I think apostate is one who 'knows' the truth but turns away from it. Doesn't mean everyone uses the terms exactly the same way.

(from wiki)
Apostates know the truth about the truth.

Obviously! Or they wouldn't be apostates. Am I one? Because I reject some things taught to me by fundamentalists?

Whatabout the various churches I was taken to? Am I an apostate to more than one now? Serious question.

I've heard the truth from Church of Christ, Methodists, Southern Baptists, Mormons, Catholics, and I am probably leaving some out. I never went to a Mosque, but I have read the Qur'an.

No, you don't qualify given the criteria you provided. You have to be a threat. If you were never a believer they'll just dismiss you as ignorant and that doesn't threaten the belief. In order to be an apostate you have to know all the dogma of a particular group making the truth claim, accept those doctrines, then reject them as false at some later point. Some groups need a way to explain why people leave because they can't admit any valid criticism.

This explains it better than I could:

The Believer and the Apostate
