    Observation: Raw ground meat is stored over raw vegetables in the East prep cooler.
    Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination.
  • VARIANCE OBTAINED FOR SPECIAL PROCESSES
    Observation: There is no documentation of an approved variance for making kimchi.
    Correction: Work with the health department to submit a variance application to the State for review. If approved, a copy of the approved variance shall be kept at the establishment and be subject to review by the inspector upon request. Discontinue current process until a variance can be obtained from the State.
  • HAND DRYING PROVISION
    Observation: No single-use toweling is available at the handwashing sink for hand drying.
    Correction: Provide single-use toweling or other approved devices at handwashing sink to facilitate proper handwashing.
  • WIPING CLOTHS - USE LIMITATION - CLOTHS FOR WIPING COUNTERS STORED IN SANITIZER (repeated violation)
    Observation: Wet wiping cloths are laying on counters at the bar and in the kitchen.
    Correction: Store wiping cloths in a sanitizing solution.
  • FOOD CONTACT SURFACES - NON TCS/PHF -IMPROPER CLEANING
    Observation: The inside of the ice maker has mold.
    Correction: Clean the inside of the ice maker at a frequency necessary to preclude the growth of mold.

    Correction: Employees shall use single-use gloves, utensils, bakery papers or other approved means when handling ready-to-eat foods.

    Observation: Cooked rice in the True upright cooler was being cold held at 61°F and lettuce in the True bar cooler was being cold held at 50°F.
    Correction: Repair the True upright and True bar coolers so they maintain a temperature at or below 41°F. Do not store any potentially hazardous food in those coolers until repairs are made.
  • Critical: RTE/PHF-TCS PROPER DATE MARKING
    Observation: Several food items held in the coolers including kimchi were not date marked.
    Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days.

    Observation: A butane gas cartridge on a kitchen shelf was stored next to food.
    Correction: Rearrange area so that toxic materials are stored away from food, equipment and single service items by spacing or partitioning.

    Observation: Spices are being stored in unlabeled containers.
    Correction: Store all foods that are removed from their original packages in containers labeled with the common name of the food or ingredient.

    Observation: The ice scoop is stored not inverted next to the handwash sink so is susceptible to splashing and contamination.
    Correction: Store the ice scoop in the ice with handle extended or inverted in a location not subject to contamination.

    Observation: A spoon handle was lying on top of a salad in the West prep table cooler (lower).
    Correction: Store in-use utensils in the food item with handle extended.

    Observation: Wiping cloths were observed lying in an empty container on the bar and on the kitchen cutting board.
