    Observation: A damp wiping cloth used for wiping counters was stored on the grill counter.
    Correction: Cloths used for wiping counters shall be stored in a sanitizing solution.

    Observation: Sausage under the heat lamp was hot held between 104-122°F
    Correction: Maintain hot potentially hazardous foods at or above 135°F. Sausage was re-heated to >165°F.

    Observation: A bottle of oven cleaner was stored on top of the Arctic Air cooler.
    Correction: Rearrange area so that toxic materials are stored below or away from food, equipment and single service items. The cleaner was moved during inspection.

    Observation: Food items including diced ham, sliced ham, and diced sausage were being cold held at 53°F-57°F in the upper and lower prep table cooler.
    Correction: Make necessary repairs to the food prep cooler so potentially hazardous food is stored at or below 41°F
