Observation: Raw ground beef was stored above raw bacon and raw pork shoulder in the walk-in cooler.
Correction: Prevent nesting of raw animal foods and store raw animal foods in order of decending hazard to prevent cross contamination. Separate raw animal food species from one another except when combined as ingredients.

Observation: Potentially Hazardous Foods (PHF) such as chicken, cut melon, and cut lettuce in the Superior 2-door cooler were cold held between 56°F - 58°F.
Correction: Do not store PHF in the Superior 2-door cooler until it is capable of maintaining food at or below 41°F. Note: PHF was discarded and the cooler adjusted during this inspection.

Observation: Food items such as breading were stored under unshielded sewer lines in the basement.
Correction: Provide shields for the sewer lines or remove the food items from this area to an area not subject to contamination.
