    Observation: Sliced tomatoes on the prep line cooler are cold held at 51°F.

    Observation: The air gap for the food prep sinks has been altered. Plastic wrap is extending from the end of the plumbing into the drain.
    Correction: Provide an air gap on water supply side to protect water supply. Remove the plastic wrap aroung plumbing.
  • FOOD CONTACT SURFACES - SOILED
    Observation: Ice bin in the bar is visibly soiled.
    Correction: Maintain food contact surfaces in a clean condition.
  • FOOD CONTAMINATION - FOOD PREPARATION
    Observation: Containers of frozen strawberries are observed thawing under running water in the ware washing sinks.
    Correction: Remove food from this location or provide alternate methods to protect food from contamination. Use approved food prep sinks.

    Observation: The interior liner of the top door of the Delfield unit is cracked and insulation exposed.
    Correction: Repair equipment to good condition or remove from premise.

    Observation: The shelf platform under the food prep surface in the cook area is soiled. Debris is accumulating under the metal surface.
    Correction: Clean all equipment on a routine basis to prevent accumulation of soil residues.

    Observation: Handwashing sink is not non-hand operated or is operating incorrectly in the bar.
    Correction: Employee handwashing sinks shall be non hand operated and if metered shall provide a flow of water without the need for reactiviation for at least 15 seconds.

    Correction: Rountinely inspect facilities for insects and rodents. Eliminate infestation.

    Observation: The EcoLab EcoSan is not being used according to EPA registed label use instructions and is at 200 PPM. Dish machine manufacturer states 50 ppm
    Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration.
  • FOOD CONTACT SURFACES - SOILED
    Observation: The inside of the front expo line cooler under the counter is visibly soiled.
    Correction: Maintain food contact surfaces in a clean condition. Correct By: 15-Nov-2013

    Observation: Wiping cloth solution is dirty and no sanitizer noted.
    Correction: Maintain wiping cloth sanitizer solution clean and free from visible debris.

    Observation: The outdoor storage surface for garbage, refuse, recycle, grease, etc. is cracked and pitted leaving areas for refuse to accumulate.
    Correction: Provide outdoor storage surfaces that are constructed of nonabsorbant materials, smooth, durable and sloped to drain.
  • INSECTS AND RODENTS - OUTER OPENINGS - SOLID, SELF-CLOSING AND TIGHT FITTING DOORS
    Observation: The exterior door in the back receiving is not self-closing or tight-fitting.
    Correction: Make the door self-closing and tight fitting to prevent the entrance of insects or rodents.
