Correction: Coolers were re-organized during inspection - eggs moved to an area beneath/away from ready-to-eat foods.
- Critical: PHF/TCS, COLD HOLDING
Observation: Multiple potentially hazardous foods (PHFs) within the NSF grill prep cooler and the open-air reach-in cooler are being cold held at temps ranging from 47 - 55°F. See temp section of this report for specific temps.
Correction: Repair coolers. Maintain cold potentially hazardous foods at or below 41°F. PHF's within these coolers at these temps for more than 6 hrs were discarded. Correct By: 20-Jul-2015
- EQUIPMENT AND UTENSILS - FOOD CONTACT SURFACES, CLEANABILITY
Observation: Multiple plastic food storage bins and lids are cracked or chipped - no longer easily cleanable/potential to break-off into food.
Correction: Discard these containers/lids. Provide food contact surfaces that are smooth, free of sharp edges and are free from breaks and cracks. Correct By: 20-Jul-2015

Observation: Improper cooling methods are observed for soup in upright nsf cooler. Stored with lid still on.
Correction: Adjust methods or procedures to facilitate cooling as described in 3-501.15.
- FOOD CONTAMINATION PREVENTED FROM PREMISE - OFF THE FLOOR
Observation: A few items are stored on the floor in the walk-in cooler.
Correction: Store all food items 6 inches above the floor.
- FOOD LABELS - LABEL INFORMATION
Observation: Yogurt parfeit, small baked items lack labels, and day old bakery items lack labels.
Correction: Label information shall include: common name of food, ingredients in order of predominance, quantity, name of business or manufacturer, major food allergens, and nutritional information.
- NON-FOOD CONTACT SURFACES - CLEANING FREQUENCY
Observation: The a few fans in the kitchen have a buildup of dirt on their guards and are not cleaned on a frequent enough basis.
Correction: Clean all equipment on a routine basis to prevent accumulation of soil residues.
- UTENSILS, EQUIPMENT AND LINENS - STORAGE OF SOILED LINENS
Observation: Soiled linens stored in on the floor under the warewashing sinks and under a handsink.
Correction: Store soiled linens in a manner to prevent contamination in a clean, non-absorbent receptacle or in a clean, washable laundry bag.
- FLOORS, WALLS AND CEILINGS - CLEANABILITY
Observation: The floor near the warewashing sinks is damaged.
Correction: Provide floors, walls, and ceilings that are designed, constructed, and installed so they are smooth and easily cleanable. Flooring is being replaced in early Jan.
