My newest favorite, chicken (bone in or boneless) skin on, with herbed goat cheese and sun dried tomatoes, spinach and cheese tortellini. So easy and so good. It's an Ina Garten recipe. I don't even like goat cheese, but this, I can like.
A salad would have been good, but my slacker tendencies kicked in.

I did not follow the recipes I found online because I used ground turkey and had no green onions. I made it as follows:
1 lb. gr.turkey 93% lean
1 medium onion slice thin
1/4 tsp. red pepper flakes

1 small broccoli crown sliced into small florets
1 bag cole slaw mix (or you can thinly slice cabbage)
1 T. sesame oil
2 T. soy sauce
1 tsp. rice vinegar
1 clove of garlic, diced or a tsp. of jarred garlic.

1/2 tsp. sugar or sugar substitute
Spray a large saute pan with cooking spray and brown the turkey with the onions. Break up the turkey as it browns. Add salt and pepper, red pepper flakes, and any other seasonings desired.
Add the cole slaw mix and the broccoli, stir, lower heat, and cover until the veggies start to wilt.
Mix the sesame oil, soy sauce, vinegar, diced garlic, ginger, and sugar in a small bowl. Then stir into pan and let it cook down for a few minutes.
I think next time I will make the sauce with some chicken broth and a tiny bit of cornstarch so that it has a little bit of a sauce.
Baked chicken legs, veggie medley and I forget what else.
