Yesterday turned into chicken fajitas with red bell peppers/onions/garlic/jalapenos. Tonight something around a small pork loin roast. Steamed cabbage with caraway, fried potatoes?

Last night husband finally got the Shrimp Creole over steamed rice I had planned for Sunday, but discovered I was out of rice.
Tonight is Shrimp Fried Rice and Sweet & Sour Chicken. He is bouncing off the walls in anticipation.

Alfredo carbonara with pancetta. Dough is rising now for a crusty italian loaf. I may make bagna cauda to dip the bread in.

Seared grouper with garlic, roasted asparagus, salad.

And if I'm being real, some cheesy popcorn. My husband brought a giant bag home last weekend, because he is a tall man who never gains weight.

Chicken thighs with creole mustard-orange sauce, roasted veggies and crispy prosciutto-wrapped cauliflower (okay, I'm really starting to miss my mashed potatoes now), and vanilla ice cream with apple-rum sauce.

Haddock filets with cauliflower and rosemary /sea salt artisan baguette crisps.
I parboil the cauliflower and finish it in a frying pan with lots of butter, Italian breadcrumbs and parmesan cheese.
