My family got together to celebrate my younger sister's birthday (which was actually last Monday the 3rd) at P.F. Chang's. I had a lettuce wrap, the barbecued spare ribs and a side of brown rice.
I think I am going to make old fashion pot roast.....a 7 bone blade roast with onion and mushroom soup, carrots, potatoes....this could change but right now.....its a plan. (I didn't freeze the roast when I unpacked groceries yesterday.)
Its funny how menu ideas come and go.....yesterday they were having a clearance on Knorr Onion Soup mix.....that triggered me thinking about the way we used to cook pot roast....so off I went to get cream of mushroom soup and a roast.....all from a dollar pack of dry soup mix.
3 tbps olive oil
1 tsp urid daal (black gram lentil....soak the night before)
3 green chilies
1/2 tsp curry powder
12 oz already cut cooked green beans
salt to taste
1 heaped tbsp unsweetened shredded coconut
Heat olive oil and add urid daal,green chilies and curry powder,stir fry for a moment and add green beans and sprinkle with salt. Cover and cook for roughish 8 minutes. Lastly sprinkle with coconut,mix well and cook for another 4 to 5 minutes. We serve it with chapatis,naan or even on a bun for lunch
Made a pot of veggie soup sure makes the house smell wonderful. Half will go in the freezer but when did crackers start going stale in an unopened box or sleeve?
