right now we have so many fresh veggies I don't know where to start. I know we are having left over pork roast. I will add a sauce of some kind, but am not sure what and then we will have a fruit salad with cottage cheese. As for veggies: holy cow, I don't know where to start: it will either be asparagus or boc choy. If I don't use the bok choy it will be no good, but I have to use the asparagus as well. I don't want both; too hard to digest two gassy veggies in one meal.

I have a head of cauliflower that has to be used before it goes by. I am making beef curry (Japanese style) for supper with rice. Perhaps I will cook the cauliflower as a side and then plan on leftovers. I hate to waste anything especially something I bought on impulse because it looked so good in the store.
Tonight we have Kaiserschmarren and a cup of Darjeeling black tea
3 Tbsp golden raisins soaked in 3 Tbsp rum
4 eggs separated
a bit of salt for contrast
1/2 tsp vanilla extract
Lemon rind of 1 lemon
3 Tbsp sugar
1 3/4 cup milk
1 cup flour
2 Tbsp butter
icing sugar for decoration
Applesauce or any compote with it
Soak raisins in rum a few hours before. Beat egg whites to soft peaks, adding a bit of salt at last moment.
Next beat egg yolks and sugar very well and add milk,flour,lemon rind and keep whisking to avoid lumps.Fold in egg whites and let batter settle a bit,maybe 10 minutes. Melt butter in a large frying pan,stir gently batter again and transfer into frying pan. Add evenly the raisins, cover and let the pancake cook for 10 minutes over medium heat. Turn over and pull the pancake apart into bite size pieces while it continues to cook.Once it is dark golden brown you sprinkle icing sugar over it and serve it with homemade apple sauce or compote.

Blanche and chill cauliflower florets for salad or soup tomorrow.
Since we're having a small dinner party tomorrow night, I'm keeping it simple for dinner tonight: pizza meatballs, mac n' cheese, garden salad and chocolate coconut cupcakes.
For Saturday's dinner party: stuffed mushrooms, Osso Buco (using lamb shanks because I won't eat veal) with gremolata, risotto and sautéed spinach, and a nice Cabernet Sauvignon (that I'm trusting hubby to remember to buy) and ricotta lemon cookies for dessert.
Black bean burgers grilled in the garage. It's just too cold.
So...we are going to grill the black bean burgers outside. Sort of outside.
Along with asparagus, potatoes, peppers, and onions.
Making my famous and pretty darn good coleslaw and serving everything on whole grain rolls.
We can pretend that it's Spring, and it is; but the weather is not changing.
Not here, at least.
