Tonight I'm going to make crab cakes for the first time. Looking for good crab meat sent me to COSTCO for the first time in 10 years where I spent enough money to go out to the best seafood restaurant in town about 20 times! Then I'll serve roasted squash and other veggies. Wish me luck.

Later this eve we are having chicken strips stir friend with napa, onions, green, red and yellow peppers, tomato, leeks, sugar snap peas, shredded carrots, celery and anything else I can find in the fridge.
I'll take some of the dish out for myself then toss in mushrooms for my Husband.
If his glucose is a bit on the low side all day today I'll make a few tortillas, otherwise no carbs from flour products.
We will have 2% milk to drink or tea and mixed fruit jellow with diced peaches for dessert.

what is the saying, keep it simple, stupid? That is what we are doing, but I hope no one calls us stupid: we are having chicken thighs, mashed potatoes and a big green salad...

I was going to grill steaks but I guess I can save them until Friday night. My daughter's vegan friend is spending the night and I have to come up with something to cook.
