I could make something pretty complex and fantastic given that description. It might involve some red potatoes, chives, parmesan cheese, cream, butter, garlic, black pepper, salt, mushrooms, beef roast, fresh thyme, fresh oregano, red wine, anchovies, carrots, onions, celery, tomato paste, olive oil, flour, and a bit of water.
Yeah, we could call it mashed potatoes and gravy. Okay, so the gravy is a bit chunky.
Tonight a meatloaf with garlic mashed potatoes and a green salad. To drink lassi and for dessert 1/2 a pink grapefruit.
1 1/2 lb ground meat
2 eggs
2/3 cup milk
salt/black pepper to taste
1 diced onion
1/2 cup grated carrots
1 cup grated old cheddar cheese
1/4 cup ketchup
1 tbsp Dijon mustard
2 tbsp brown sugar
Mix eggs with milk,salt/black pepper and bread crumbs and add to mixed ground meat with grated carrots,diced onion,grated cheese and put in a casserole dish.
Combine in another bowl brown sugar,ketchup and Dijon mustard and cover meatloaf with it evenly.
Bake in oven at 350 F for 1 hour and serve with rice or potatoes and any type of salad.
DH has a cold so I'm making a comforting shepherd's pie for dinner tonight. Probably a side of cooked cabbage. Hopefully, there will be leftovers for tomorrow.
Tonight we're having spicy pork chops and sauce over linguine, spinach salad and a chocolate bundt cake for dessert.
