Excuse my excitement, but I haven't had it since last summer. Bought some on sale, 3 for $1 at Hannaford (later this summer they'll be on sale for 5/$1, but I didn't want to wait until who knows when!). I had a whole cob ... that still "counts" as just 1 serving, right?

Isn't that corn beautiful?! It was SO EASY to cook -- kept it in its husk, stuck it in the microwave on high for 3-1/2 minutes, took it out, pulled off all the husk and silk, and VOILA!

I had the corn with a small piece of baked chicken breast and about half my usual stir-fried veggies (today it was onions, asparagus, grape tomatoes, and mushrooms). Everything was delicious!
I haven't had a corn on the cob all winter!! looks good...

Finishing up the pizza sauce and other ingredients - this time made a pepperoni, pineapple, & jalapeno pie with cheddar sprinkled on top.

Also made a big broccoli salad for the weekend - the one with bacon, grapes, red onion, sunflower seeds, and a sweet mayo-based dressing. Didn't have enough bacon to make it righteous.

Had a Dr. Praeger's brand veggie burger again: a double burger this time (decided to cut back on the bread and use just one bun ). Drank Foster's Premium Ale. Will enjoy blueberries on a scoop of vanilla bean ice cream for dessert soon.

Yesterday was big bowls of vegetable soup with chunks of home smoked ham and good ol' grilled cheese sandwiches. White bread, American cheese pan fried in mayo. Slobber!!!

SO brought a case of mushrooms home. Chicken with garlic chives, onion, mushrooms and Chardonnay, Basmati and a big green salad.

I am grilling up some jerk chicken tonight. Since my version is fairly spicy I will serve with a large salad with blue cheese dressing. It just seems to go together so well.
