For us tonight, it'll be chicken fajitas in flour tortillas. I've got some lovely ripe tomatoes that I'll make some fresh salsa out of, as well. And then there'll be guacamole too. It's my kids' favourite meal.
Cuban Sandwich with ice cold Presidente Beer... recipie for cuban sandwich if you are interested... Half Loaf of good Italian bread... butter both side... add sliced roast pork, sliced boars head ham, pickles, swiss cheese and mustard. Place on a flat grill or skillet and press the sandwhich until the bread is golden brown and cheese melts. eat warm with the ice cold beer.. make sure it is Presidente Beer

Hint taken... The only secret family recipes my family has is store bought food (not as good as homecooking)
2 tbsp extra-virgin olive oil
5 tbsp unsalted butter (I used salted and just omitted the salt from the recipe)
2 shallots, finely minced
4 med zucchini, grated
4 med yellow zucchini, grated
2 tsp sea salt
1/4 c thinly sliced fresh mint leaves
1 lb penne
coursely ground black pepper
freshly grated Parmigiano-Reggiano cheese
Bring a large pot of salted water to a boil
Heat oil and 3 tbsp butter in a large saucepan over medium-high heat until butter is melted. Add shallots, reduce heat to low, and cook until just softened, 1 to 2 minutes. Add zucchini and salt; stir. Increase heat to med-high and cook until vegetablesare tender and their liquid has evaporated, about 15 min. Remove from heat add mint. Stir well and set aside.
Cook pasta until al dente. Drain and immediately toss with remaining 2 tbsp butter and vegetable mixture. Serve at once, with pepper and cheese.

After coming back from a Goodwill Store about an hour away, stopped at the deli and ordered 2 BBQ Pork steak dinners to go, green beans and corn with a biscuit, A & W root beer. We drove (well I drove) to the city park, put the pup on her leash next to the table. We ate as much as we could, folded up everything and came home. DH had 'Cardinal Zin' red and I had a glass of Creek Bed Red. Not a bad day, after all.
I spent more time in the kitchen than usual b/c I tried a new recipe. Had I known how much work it would be, I would have left for some other day.
Anyhoo, I made Gnocchi from potatoes, cauliflower with herbs and eggs and fried chicken breast. Along with it went a creamy gravy.
The Gnocchi were easy to be made but a lot of work nevertheless. But it was worth it, very yummie.
So today's dinner will probably be the leftovers of yesterday.
