Grits can be tricky. Properly prepared, they are just delicious. I recommend Nathalie Dupree's Shrimp and Grits Cookbook. Best recipe I've happened upon.

Never heard of them? I guess there are no Waffle House in your state. You don't know what your missing. Nothing like scarfing down an All Star Breakfast at 3 am in your local Waffle House.
