Tonight I'm making a "poverty pancake".....I dreamt it up in college while stretching my food budget. Essentially it's french toast in a pancake form.

Just scramble 12 eggs....add one tablespoon water and salt heavier than you would the eggs alone.

Add PLAIN breadcrumbs and mix in until it's the consistency of pancake batter. Let stand 5 minutes.

Heat butter in large frying pan.....and add mixture after you beat together ingredients again. Cook as you would any pancake.

Serve plain or with jelly, butter, jam.....maple syrup etc...It's really very tasty and quick/easy to make.....hope somebody gives it a try.

Tonight is going to be oven-broiled chicken breasts marinated in some Dale's and lemon pepper, cabbage-beef-rice casserole, tossed salad, rolls, strawberry cake with strawberry frosting.

Chicken salad to Kaiser toasted rolls, pickles, sweet potato fries and some sliced strawberries and bananas.

I had to go look this up...looks good. I think I'll have to give this a try. My only problem is that all the recipes I see say to use processed cheese...like velveeta...I'm not a velveeta fan. Any good substitutes?

We have some tortilla chips to use up from the other night when we stopped at our fav Mexican joint. So I'm making loaded nachos with hamburger, green onions, diced tomatoes and cheese. No hot pepper eaters in this house.

You could use any good melting cheese but cheddar alone tends to separate. Wouldn't make that much difference in a casserole though. I melt it in my double boiler adding a little milk to make it creamier. Or my SIL use to use Campbell's cheese soup instead of velveeta but I've never tried it.
